Chicken Soup

Tonight was another lazy night. We are all still recovering from the stomach ailment of the week. I had a chicken carcass in the fridge from the chicken dish earlier this week, and another in the freezer from the last time we had rotisserie chicken. We were short on veggies, but I decided we’d have chicken soup anyway. I threw the carcasses in a pot, covered with water and cooked at a low simmer for 4-5 hours (I usually just let it go as long as I can, anywhere from 4-10 hours). Scoop out the parts, skim the fat (if you have time… I didn’t tonight) and add enough salt to make it taste the way you want it.

Then I threw in some dried pasta and a couple frozen chicken thighs, boiled for 10 minutes (until pasta was done), pulled out chicken, chopped it and threw it all back together. Quick and easy (and delicious!) chicken soup.

Perfect for a lazy day, and great way to clean those extra carcasses out of your freezer!
